Soft Butterscotch Oatmeal Cookies
This is such a easy recipe for amazingly delicious soft oatmeal cookies with butterscotch chips. These can be made using medicinal cannabis oil/butter to help relax the mind and soothe the body of any aches and pains. All of the ingredients I use are and natural and or organic, with the exception of the butterscotch chips.
The ingredients you will need are:
1/2 cup unrefined coconut oil
1/2 cup raw sugar (or white sugar)
1/2 cup packed brown sugar
1/2 teaspoon vanilla extract
1 cups non-bleached flower (bleached is fine also)
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoons ground cinnamon
1.5 cups quick cooking oats
- 1/2 cup butterscotch chips
Original recipe makes 1 dozen cookies.
1. In a medium bowl combine butter, raw sugar, brown sugar. Whisk in the egg and then add the vanilla extract. In a separate bowl combine flour, baking soda, salt and cinnamon. Mix it into the creamy sugar mixture. Now add in the oatmeal and butterscotch chips. Cover and refrigerate for at least an hour.
2. Preheat oven to 375 degrees F. Place walnut sized chunks of dough about 2 inches apart on a well greased cookie sheet and smoosh them down a bit with your hand or any utensil. Make sure not to flatten them too much because if you do they will not turn out as soft and chewy as they should
3. Bake for 8-10 minutes in a preheated oven. Let the cookies cool for at least 10 minutes before serving .Mine are come out a little messy but super yummy.
